What Is UHT Milk?

You may have noticed that some cartons of milk are stored in the refrigerator, while others sit on a shelf for months before they are opened. The difference is often a process called UHT.

UHT stands for Ultra High Temperature. It is a special heating process that helps keep milk safe and fresh for a long time without refrigeration, as long as the carton remains unopened.


How Is UHT Milk Made?

The process takes only a few seconds.


1. Fresh milk is collected

The journey begins at the dairy farm.

Milk is collected from healthy cows and checked for quality before it is processed.


2. The milk is heated

The milk is heated to a very high temperature, usually 135°C to 150°C, for about 2 to 4 seconds.

Although the temperature is extremely high, the heating time is very short.


3. The milk is cooled quickly

Immediately after heating, the milk is cooled.

The cooled milk is poured into sterile cartons.

5. The milk is ready

Because the milk has been heated and sealed in sterile packaging, unopened UHT milk can be stored at room temperature for several months.


Why Is UHT Milk Heated?

The very high temperature kills harmful bacteria and other microorganisms that could spoil the milk or cause illness.

This makes the milk safe to store for a long time without refrigeration while the carton remains unopened.


What Does UHT Do?

UHT processing greatly extends the shelf life of milk.

Unlike fresh pasteurized milk, which must be refrigerated, unopened UHT milk can be stored safely in a cool, dry place for several months.

Once the carton is opened, it should be refrigerated and used within a few days, just like fresh milk.


How Should You Store UHT Milk?

Before opening:

  • Store in a cool, dry place at room temperature.

  • No refrigeration is needed while the carton is unopened.

Does UHT Change the Nutrition?

UHT milk still provides important nutrients such as:

  • Phosphorus

  • Potassium

  • Vitamin B2

Some heat sensitive vitamins, such as vitamin C and small amounts of certain B vitamins, may decrease slightly during UHT processing. However, milk is not a major source of vitamin C, so this has little impact on its overall nutritional value.


Does UHT Milk Still Contain Lactose?

Yes.

The UHT process does not remove lactose.

It also does not remove milk proteins.

People with lactose intolerance will still react to the lactose in UHT milk, and people with a cow milk allergy will still react to the milk proteins.

Yes.

UHT milk is considered safe and is widely consumed around the world.

Countries where refrigeration during transport is more difficult often rely heavily on UHT milk because it stays fresh much longer before opening.
